Ingredients

Red wine reduction

  • Red wine
  • Veal stock or Demi glacé
  • Thyme, garlic,black pepper, salt

  • Mashed potatoes
  • Caramelizes brussel sprouts
  • Spinach or broccoli
  • Sautéed mushrooms

Main ingredients

  • Short Rib - grass fed, bone in
  • Seasoning (salt, pepper, garlic powder, thyme, bay leave, olive oil)

Directions

Red wine reduction

  1. Combine wine, thyme and garlic over medium heat and reduce for about 8 minutes
  2. Add short rib juices and veal stock to taste and reduce for about 20 minutes
  3. Salt and pepper to taste

Meat

  1. Season short ribs heavily
  2. Sous vide for 72 hours at 130F
  3. Save remaining juices for red wine reduction
  4. Pat meat dry and sear in super hot cast iron skillet
