Directions

  1. Set Nomiku water bath to 60ºC (140.0 °F).
  2. In a zip bag, seal artichoke heads, and gin using the water displacement method. There might still be a little air in the bag so be sure it’s fully submerged. Sous vide for 1 hour.
  3. Remove from water bath, let cool to room temperature, and strain. Use the infused gin for martinis and negronis.
