Ingredients

  • 1/2 cup Sweet Vermouth (red)
  • 1/4 cup of water
  • 3/4 cup toasted oak chips
  • 1/4 orange - peel
  • 1/2 cup of Campari

Directions

  1. Combine liquids
  2. Add orange peel - no pith please
  3. Wash wood chips (remove sawdust)
  4. Place contents in a sterile Mason jar or bag
  5. Sous vide for 1-4 hours
  6. Chill in an ice bath for 20 minutes
  7. Strain out wood chips and other solids
  8. Chill and serve
