Directions

  1. Season beef tenderloin with salt and pepper
  2. Truss tenderloin - http://www.huffingtonpost.com/2011/10/04/how-to-truss-a-roast_n_995320.html
  3. Rest for up to 24 hrs
  4. Sear first, then place into 137F water bath for 2 hours
  5. Do a quick 30 second sear once out of water bath
