Ingredients

Pork

  • 1 tsp Kosher Salt
  • ½ tsp Ground Black Pepper
  • 1 tsp Brown Sugar
  • 1 tsp Ground Coffee Bean
  • ¼ tsp Cayenne Pepper
  • ½ tsp Ground Cumin
  • ½ tsp Smoked Paprika
  • 1 lb Pork Tenderloin (1 Piece)
  • 1 TBSP Canola Oil

Salad

  • ½ Cup Quinoa, Cooked According to Package Instructions and Cooled
  • 1 Cup Grated Carrot
  • ½ Cup Shredded Cabbage
  • ½ Cup Grated Apple (About 1 Small Apple)
  • ¼ Cup Chopped Pitted Dates
  • 1 Shallot, Thinly Sliced
  • 2 TBSP Chopped Parlsey
  • 2 TBSP Chopped Cilantro
  • ¼ tsp Ground Coriander
  • ¼ tsp Ground Cumin
  • 1 oz Lemon Juice (About 1 Small Lemon)
  • 3 TBSP Extra Virgin Olive Oil
  • Salt and Pepper

Directions

  1. Set up Nomiku water bath and turn temperature to 57ºC (134.6ºF)
  2. Mix salt and spices in a small bowl. Season pork with spice mixture.
  3. Coat seasoned tenderloin with canola oil and seal in a freezer safe zip bag using the water displacement method.
  4. Place bag in Nomiku water bath and cook for 1 hour.
  5. Remove bag from bath, drain pork and transfer to a plate, reserving any liquid.
  6. For salad, combine all ingredients in a large bowl and mix thoroughly. Season to taste with salt and pepper.
  7. Heat a cast iron skillet over medium high heat. Sear pork until browned on both sides, about 2 minutes per side.
  8. Remove pork from skillet. Slice ¼ inch thick against the grain.
  9. To serve, divide salad between 4 plates. Place a quarter of the sliced pork on each salad. Spoon the reserved pork cooking liquid over each portion.
