Ingredients

  • 2 egg yolks
  • 10g sugar
  • 20cl milk
  • 1 vanilla pod

Directions

  1. Mix the yolks with sugar
  2. Scrape the vanilla and mix
  3. Add the cold milk
  4. Put in a vacuum bag, and seal without vacuuming, as this is liquid
  5. Plunge in water bath
  6. Cook for 10mins at 81C
