Ingredients

  • 11 egg yolks
  • 90 grams sugar
  • 600 grams heavy creme
  • 3 grams salt
  • 6 small mason jars

Directions

  1. In a sauce pan pre heat your creme to 158
  2. In a deepest bowl creme eggs, sugar and salt, add creme when warmed
  3. Pour mixture through a collider into a pouring jug and then slowly into mason jars
  4. Tip) if bubbles form pass a torch past and bubbles will clear
  5. Sous vide at 178 for 1 hours then ice bath for two hours
  6. Sugar the top and torch to caramelize. Serve with berries
