Ingredients

  • 4 eggs
  • 1 Tablespoon nutritional yeast
  • 4 oz. by weight cottage cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon fresh ground pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon fresh ground pepper

Directions

  1. Combine eggs, salt, pepper, yeast, and cottage cheese with an immersion blender.
  2. Portion out into 4 4oz. canning jars.
  3. Add any "mix-ins" you might want to have with your egg-bite. For example, crumbled bacon or a dollop of Cheedar pot cheese with scallions, or even carmelized onions with porchetta and oregano. Go wild.
  4. Screw on lids tightly and immerse in hot water bath. Cook for 1 hour.
  5. Remove and allow to cool before opening. Serve by turning out on plate or straight from the jar. Store in fridge. Reheat 30 seconds in the microwave or by heating in sous vide setup
