Ingredients

  • Chicken (cut up w/ bone is fine)
  • Salt
  • Pepper
  • Olive Oil
  • Piece of Butter
  • Herbs or Aromatics of Choice

Directions

  1. Put it all together in a bag
  2. Place bag in 74C/165F water bath using water displacement method
  3. Sous vide minimum 4-8 hours
  4. Cool bag in ice water
  5. Pull out chicken and crisp skin in a pan. This way the chicken won't overcook.
