Well I think it is great I'd recipe however I think if you cook it on the pan for two minutes pit side it will affect the steak doness

Directions

  1. For medium rare, preheat water bath to 133.5 degree F.
  2. Vacuum seal the ribeye cap and poach it in the bath for about an hour.
  3. Season steak with salt and pepper.
  4. Heat a heavy bottom pan with some lard. Throw in couple cloves of crushed garlic and dried thyme.
  5. Once the pan is very hot, sear the steak for about 2 minutes a side.
