Note: Most lean pork recipes (tenderloin, loin (which is now called sirloin) spec 60°C (140°F) but I like the slightly pink and noticeably more moist 57°C (135°F).

Directions

  1. Pork tenderloin is the perfect meat for sous vide. With its very low fat content, it's usually overcooked and sous vide saves the day. No recipe needed: Salt, pepper, sage, and anything else you like. Bag it and go. Sear it and you're done.
