Ingredients

  • 1 Prime Cut NY Strip Steak - 2" Thick
  • Kosher salt
  • Coarse ground pepper
  • Canola oil
  • 1 tbsp butter

Directions

  1. Trim excess fat from 2" NY Strip steak
  2. Seal steak in bag and sous vide for 90-110 minutes
  3. Remove steak, pat dry with paper towels
  4. Add 2 tbsp canola oil to cast iron pan that is heated over med high heat. Add dried steak to hot oil and cook for 90 seconds on each side. Add butter just before flipping steak the first time. Sear the edges for about 30 seconds a side.
  5. Serve immediately
