Ingredients

  • 10oz NY Sirloin strip
  • 1/4 Cup of Extra Virgin Olive Oil
  • 2 cloves of garlic - roughly chopped
  • 2-3 sprigs of fresh Rosemary
  • 1-2 Teaspoons of ghee

Trying the recipe. With 7.4oz of meat. Should I shorten the cooking time? Or lower the temperature?

I would lower the temp. Given that weight or thickness of your steak, go with a 125-130 and then sear it nicely until it reaches med-med rare which is 140ish

I'm doing it with 2.25 lbs of steak and want it medium rare. Do you have any suggestions?

Directions

  1. Place room temperature steak and ingredients into a plastic bag and seal
  2. Set Nomiku to 140F
  3. Drop bag into water once temp has been reached
  4. After set time has reached, remove bag
  5. Set cast iron pan on med high and prepare to move steak onto pan for searing
  6. Teaspoon of ghee into pan and sear steak on all sides for about 2-3 mins each, including the fat strip
  7. Remove from pan and let it sit for 4 mins, then cut and serve!
