Ingredients

  • Two organic cage free eggs
  • Half an avocado
  • I Tsp pistachios shelled salted and roasted
  • Sea salt
  • Pepper

Directions

  1. While eggs are cooking, halve an avocado and scoop whole into a bowl. Grind salt on to avocado. Chop pistachios to your liking.
  2. When eggs are ready, cut the tops off of the eggs and pour the first egg into the avocado. Then cut the second egg and pour next to the avocado.
  3. Dust the bowl with the chopped pistachios. Grind salt and pepper to your liking.
