Introduction

Researched all the different recipes that are out there for Starbucks Sous Vide Egg Bites and think Copy Kat Recipes got it down best. I made a couple small tweaks for my version. Recipe can be doubled.

Ingredients

  • 4 eggs
  • 4 Tablespoons of cottage cheese (1% small curd)
  • 1/4 cup shredded Monterey Jack cheese
  • 1/4 cup shredded Gruyere cheese
  • 3 shakes of Sriracha
  • pinch of salt, pinch of pepper
  • 2 slices of bacon, cooked fairly crisply
  • extra shredded cheese for topping during broiling

Directions

  1. Set your sous vide for 167 degrees. This will take some time to heat. So prepare the recipe while this heats up. Into a blender add eggs, cottage cheese, the 1/4 cup shredded Monterey Jack cheese, 1/4 cup shredded Gruyere cheese, Sriracha sauce and salt/pepper. Puree until it is a uniform mixture.
  2. Spray 4 canning jars (4oz jelly jars) with a non-stick spray (butter flavored). Break a piece of bacon into each jar. Pour egg mixture into jars. Wipe the rim of the jar to make sure it is clean, then place the lid on the jar. Place jars into the sous vide.
  3. Once the sous vide has reached 167 degrees cook eggs for about 35 minutes or until they are completely set. If you do not wait until the sous vide has reached proper temperature the eggs may not set fully.
  4. Remove eggs from the jars of eggs you are eating now. Keep any extras to be eaten later in the sealed jars and store in the refrigerator or freezer.
  5. For serving: Sprinkle additional shredded cheese on top, and broil on high until they just turn brown. If serving after being stored, bring to room temperature prior to broiling and broil on low.
