Ingredients

  • 1.5 lbs Beef loin/ ny strip
  • Kosher salt
  • Ground black pepper
  • 7 tbs butter
  • 6 oz egg noodles
  • 8 oz button mushrooms diced
  • 1/4 cup onion or shallot finely chopped
  • 3 tbs flour
  • 1 c beef stock
  • 2 tbs white wine/cognac
  • 3/4 c sour cream

Doesn't specify how many servings it makes. 1.5 lbs was enough beef for 4 but I would have doubled the amount of sauce. Overall good flavor.

Directions

  1. Place steak seasoned with salt & black pepper with butter and sprig rosemary in sous vide bag
  2. Cook in bath at 136f for 1 hour or preferred doneness
  3. Just before steaks are ready to remove from bath. Melt 2 tablespoons butter in skillet over medium-high heat. Add chopped shallots and sauté until tender, about 2 minutes. Add button mushrooms. Sprinkle with pepper and sauté until liquid evaporates, about 10 minutes. Remove from pan and set aside.
  4. Remove steak and sear in pan with 1 tbs butter. After seared remove and let rest.
  5. Remove rosemary sprigs. Melt 2tbs butter then add flour to pan after mixed with butter add beef broth, then white wine, mushroom onion mix. Simmer until liquid thickens and just coats mushrooms.
  6. When ready stir in sour cream to sauce and serve on top of cooked egg noodles followed by diced steak on top.
