Ingredients

  • 4 shallots (minced)
  • 8 garlic cloves (minced)
  • 3 tbsp Honey or Agave
  • 1.5 lbs Ground Pork (70/30 is best)
  • 2 tsp Fish sauce
  • 2 tsp Tamari sauce
  • 1 tsp Salt
  • ½ tsp Pepper
  • Big handful fresh Cilantro leaves (minced)
  • 8 Green onions (thinly sliced)
  • 1-3 Thai chilies (optional)

if i freeze after 2hr bath & 30min sit, tips on reheating? also, any cooking changes if i freeze raw patties for later (instead of taking out after 30min and cooking immediately)? thanks!

Directions

  1. Add honey, tamari, S&P, fish sauce, shallot, green onion, garlic, cilantro (and thai chilies if using) to a bowl and mix.
  2. Fold in the ground pork gently.
  3. Using a 4 inch ring mold (or by hand) make 4 patties.
  4. Place on a baking sheet and place in the freezer for 30 min.
  5. Place 2 patties per bag (side by side, not overlapping) and vacuum seal.
  6. Place in your preheated 56.5C water bath.
  7. Start the timer when the temp has risen back to 56.5C for 2 hrs.
  8. Remove the bags from the bath and set on the counter (unopened) for 30 min.
  9. After 30 min either remove patties, pat dry and sear for about 60-90 sec per side or place in an ice bath for 30 min (unopened) and then refrigerate or freeze.
  10. Burgers can be served on a bun with pickled onion, radish and avocado mash, raw red onion and cilantro works as well. Pickled cucumber and carrots (red wine vinegar and sugar) are also optional.
